Chiayi Distillery is a century old distillery. Due to the rise of Alishan tourism, Chiayi Distillery has become a popular sight. Its main products are Shaoxing wine, sorghum liquor, and compounded spirits. There are two exhibition centers; one is located in Chiayi Distillery and one is located in Zhongpu Township.

Chiayi Distillery only had 4 acres in Chiayi City. In order to increase productivity, it has moved to Minhsung Industrial Park, which had over 28 acres in size. The demand of Shaoxing wine has increased rapidly in late 1980s, and many workshops were established. The Shaoxing wine workshop was established in 1983, and the sorghum liquor workshop was established in 1990. However, the demand for Shaoxing wine has declined since 1995, so Shaoxing wine workshop was closed down. Chiayi Distillery then focused only on producing sorghum liquor and compounded spirits.
